Chicken, Semi Dried Tomato and Basil Pasta - Cooking Recipes
Serve 4
300g dried short pasta
125ml (1/2 cup) of the cooking water
2 tablespoons olive oil
1 sliced red onion
110g (2/3 cup) semi-dried tomatoes
the shredded meat of half a large store-bought barbecued chicken
1 cup torn basil leaves
1. Cook 300g dried short pasta following packet directions.
2. Drain, reserving 125ml (1/2 cup) of the cooking water.
3. Meanwhile, heat 2 tablespoons olive oil in a large saucepan, add 1 sliced red onion and cook for 3-5 minutes until soft.
4. Add 110g (2/3 cup) semi-dried tomatoes, the shredded meat of half a large store-bought barbecued chicken and the reserved cooking water.
5. Stir to heat through.
6. Toss through the cooked pasta and 1 cup torn basil leaves.
7. Season and serve immediately with shaved parmesan.
