Mixed Pea Salad - Cooking Recipes

150g sugar snap peas, topped
150g snow peas, topped
3 teaspoons sesame seeds

Dressing:
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon brown sugar
Salt and ground black pepper, to taste

1. To make the dressing, combine all ingredients in a screw-top jar and shake well to combine.

2. Add the peas, sugar snap peas and snow peas to a large saucepan of boiling water and cook for 1 minute, or until bright green. Drain immediately and refresh under cold running water. Drain well. 3 Place the mixed peas in a serving bowl and sprinkle with the sesame seeds. Pour dressing over and toss to combine.
